Sugarfree Blueberry Banana Breakfast Mug

I have been crazy about breakfast mugs ever since I discovered
their existence. They are filling, easy to make and very delicious.
You can be as creative or un-creative as you want to be!

  What is a breakfast mug?

A breakfast mug is a single serving breakfast, that you usually prepare in a mug, in the microwave.

The advantages are that you don’t waste any ingredients and that you
don’t have many dishes to do.

I usually use my supersized mugs, because it won’t fit otherwise.
Don’t you have a supersized mug? Then only use half of the ingredients
or make two breakfast mugs.


What do you need?
 1 Tablespoon sugarfree applesauce
1 banana
3 Tablespoons blueberries
1 Teaspoon raisins
1 Teaspoon grapeseed oil
3 Tablespoons + 1 teaspoon whole wheat flour
1/2 Teaspoon cinnamon
1/4 Teaspoon salt
1/2 Teaspoon baking powder
1 Teaspoon steel-cut oats
1 Teaspoon Slivered Almonds
1/2 Teaspoon grapeseed oil


1. Mash the banana in the tea cup and add the apple sauce, raisins and oil.
Add 1 teaspoon whole wheat flour to the blueberries, to prevent them from
sinking to the bottom of the mug.

2. Add the rest of the flour, salt, cinnamon and baking powder to the wet ingredients. Mix this well and add the blueberries. 

3. Mix the oats, almonds and oil in a separate bowl, with a teaspoon of the cake mixture. Add it on top of the cake, as a streusel topping.

4. Microwave the breakfast cake for 2 minutes on 700 watts (or highest setting).  The cake has to bounce back when you press on it. If the cake is still mushy, microwave for additional 30 seconds.


Enjoy! The cake is nice and fluffy, filling and not too sweet. And, it’s filled with lots of fruit. If you want to be fancy, you can serve the cake with some banana ice cream or with some yogurt.
